Ingredients:

- 1 cup split red lentils (masoor dal)

- 2-3 green chilies, finely chopped

- 1-inch piece of ginger, grated

- 1 teaspoon coriander seeds, crushed

- 1 tablespoon fresh coriander leaves, finely chopped

- Salt to taste

- Water for soaking and steaming

How to Cook?

1. Preparation:

- Rinse the split red lentils (masoor dal) thoroughly under running water. Soak them in water for about 3-4 hours.

- Drain the soaked lentils and transfer them to a blender or food processor.

- Add chopped green chilies, grated ginger, crushed coriander seeds and salt to taste.

- Blend the mixture to a coarse paste. If needed, add a small amount of water, but ensure the batter is thick and not watery.

2. Shaping the Bafauri:

- Grease a steamer plate or a thali (flat plate) with oil to prevent sticking.

- Take a small portion of the lentil mixture in your hands and shape it into a small, round flat disc.

- Repeat the process with the remaining mixture, shaping them into similar-sized bafauris and placing them on the greased plate.

3. Steaming the Bafauri:

- Heat water in a steamer or a large pot fitted with a steaming rack.

- Once the water starts to boil, place the greased plate with the shaped bafauris in the steamer or on the rack.

- Cover the steamer or pot with a lid and steam the bafauris for about 12-15 minutes on medium heat, or until they are cooked through and firm.

4. Serving:

- Steamed Masoor Dal Bafauris can be served hot or at room temperature.

- Garnish with freshly chopped coriander leaves for added freshness and flavor.

- Serve the bafauris with your favorite chutney, such as mint chutney or tamarind chutney.

- Enjoy these healthy and flavorful lentil snacks as an appetizer or evening snack with a cup of tea or coffee.

5. Tempering the Bafauris

- In an Iron Kadhai or a non stick pan, take oil and let it heat.

- Add mustard seeds, sesame seeds, dried red chili, curry leaves and then add bafauri.

- Fry it on a medium heat until it gets crispy and golden brown.

Note:

- You can experiment with the spices according to your taste preferences. Adjust the chili and other spices as desired.

- If you don't have a steamer, you can use a large pot with a steaming rack or improvise with a heat-safe plate and a pot with a tight-fitting lid.

Steamed Masoor Dal Bafauri is a fantastic variation of the traditional recipe that provides a healthier alternative without compromising on taste. The steaming method locks in the nutrients and reduces the oil content, making it an ideal snack for those looking for healthier options. These flavorful bafauris can be enjoyed guilt-free as a tasty appetizer or evening snack. So, give this recipe a try and savor the goodness of lentils
